Ingredients for Tray Manti

For the Dough:

  • 4 cups flour
  • 1.5 cups water
  • 1 egg
  • 1 teaspoon salt

For the Filling:

  • 500g ground meat
  • 1 onion
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon black pepper

For the Sauce:

  • 3 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 2.5 cups hot water (500 ml)
  • 1 teaspoon salt

For the Topping:

  • 2 cups yogurt
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 2 teaspoons red pepper flakes
  • 2 teaspoons dried mint
  • 1 teaspoon paprika

Preparation Steps

Begin by preparing the filling: mix the ground meat, grated onion, salt, red pepper flakes, and black pepper thoroughly.

For the dough, combine flour and salt in a mixing bowl. Create a well in the center and add the egg and lukewarm water. Mix with a fork, then knead until a firm, non-sticky dough forms. Divide the dough into 6 equal portions and shape them into balls. Cover the dough balls with plastic wrap or a cloth to prevent them from drying out while you work.

Roll out each dough ball thinly. Place the ground meat mixture along two edges of the rolled-out dough. Roll the dough from the edges towards the center to form logs. Cut each log in the middle to separate them, yielding four rolls. Cut these rolls into 2 cm wide pieces. Repeat with the remaining dough balls.

Arrange the manti pieces in a greased baking tray. Bake in a preheated oven at 180°C (350°F) for 40 minutes, using the top and bottom heat setting without a fan.

While the manti bakes, prepare the sauce: sauté the tomato paste in vegetable oil for 1-2 minutes. Add salt and hot water, then cook for a few minutes until the sauce thickens. Pour the sauce over the lightly browned manti and bake for another 10 minutes at 180°C (350°F).

Finally, serve the Tray Manti topped with yogurt mixed with salt, and a drizzle of butter and oil infused with spices. Enjoy your delicious homemade Tray Manti!
