Ingredients and Filling Preparation
The recipe calls for 35 sheets of phyllo dough (baklavalık yufka). The savory filling primarily consists of 600g of leeks, one carrot, 4 tablespoons of oil, salt, red pepper flakes, and black pepper. Once the vegetables are sautéed until tender and all moisture evaporates, they are cooled before being mixed with 400g of labneh cheese.
The Flavorful Sauce and Assembly
A crucial component for crispiness is the brushing sauce, made from half a cup of milk, half a cup of oil, 100g of melted butter, and one teaspoon of salt. The assembly involves layering 15 phyllo sheets in a greased 25×35 cm baking dish, brushing each layer with the sauce. Half of the leek-labneh filling is spread over the 15th layer. Another 10 layers of sauced phyllo are placed, followed by the remaining filling, and topped with the final 10 sauced phyllo sheets.
Baking Instructions
After slicing the pastry, the remaining sauce is poured over the top. The börek is then baked in a preheated oven at 190°C (without fan, top and bottom heat) for 45 minutes.
