This unique dish incorporates regional tastes, pairing the sweetness of pumpkin and caramelized onions with the savory notes of Mihaliç cheese, a beloved flavor from the Bursa and Balıkesir regions.
Recipe Highlights: Simple Yet Revolutionary
The recipe, created in collaboration with @filizmakarna, emphasizes simplicity without sacrificing flavor complexity. The core components include Filiz Kuskus, roasted pumpkin, and caramelized onions.
Key Preparation Steps:
- Pumpkin Preparation: 400g of diced pumpkin is tossed with garlic, olive oil, salt, turmeric, red pepper, and black pepper. It is then roasted at 190°C for 25 minutes.
- Onion Caramelization: Sliced onions are sautéed in olive oil until deeply caramelized, then set aside.
- Kuskus Cooking: Filiz Kuskus is lightly toasted in butter before 3 cups of hot water and salt are added. It is cooked until the water is absorbed.
- Assembly: The roasted pumpkin is gently folded into the cooked kuskus. The dish is then topped with the reserved caramelized onions, grated Mihaliç cheese, and pomegranate seeds for serving.
