A Traditional Turkish Dessert Gets a Modern Makeover
Chef @ferhatbora has introduced an innovative twist to the classic Turkish dessert, Kabak Sütlüsü, by incorporating a hint of tahini. This delightful addition transforms the familiar pumpkin dessert into a spectacular celebration of flavor. The updated recipe promises a practical preparation process and a refreshingly light taste, making it an ideal treat for any occasion.
Tahinli Kabak Sütlüsü (Pumpkin Dessert with Tahini)
Serves: 8 people
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Ingredients:
- 1 kilogram pumpkin (peeled)
- 1 cup water
- 1 cinnamon stick
- 1.5 cups granulated sugar
- 2 cups milk
- 1 packet vanilla sugar
- 1 cup tahini
- For Garnish: Walnuts, pomegranate seeds
Instructions:
- Ensure pumpkins are thoroughly peeled, with no skin or green parts remaining.
- Chop the pumpkins into large pieces. Place them in a pot with water and a cinnamon stick. Cook over low heat until tender, adding hot water as needed if the water evaporates. Alternatively, you can steam the pumpkin.
- Once the pumpkin is completely soft, add the sugar and continue cooking with the lid off. Once the pumpkin and sugar combine and release their liquid, stir in the milk. Remove the cinnamon stick after the dessert boils for a minute. Blend the mixture until smooth.
- While the dessert continues to simmer on low heat, add the vanilla sugar and tahini. Blend again to incorporate.
- Portion the dessert into bowls or glass containers. After it reaches room temperature, refrigerate for 3-4 hours. Garnish with walnuts and pomegranate seeds before serving. Enjoy!
