Recipe: Carrot Sauce Pasta
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Ingredients:
- 3 tablespoons olive oil
- 1 red onion
- 2 cloves garlic
- 3 carrots (grated)
- 2 sprigs fresh thyme
- 1 teaspoon curry powder
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 200 grams labneh
Instructions:
- Sauté the chopped onion and garlic in hot olive oil for 3-4 minutes.
- Add the grated carrots and continue to sauté until softened.
- Add the spices and water, bring to a boil, then reduce heat and simmer for 5 minutes.
- Transfer to a heat-resistant bowl and let cool to room temperature for 10 minutes.
- Once cooled, blend with the labneh.
- While cooking the pasta, heat the sauce and add 1 ladle of pasta water.
- Combine the sauce with the cooked pasta, add 1 tablespoon of butter, mix, and serve. Enjoy!
