Creamy Carrot Pasta Sauce Recipe by Yaseminchef

Recipe: Carrot Sauce Pasta

Preparation Time: 5 minutes
Cooking Time: 15 minutes

Ingredients:

  • 3 tablespoons olive oil
  • 1 red onion
  • 2 cloves garlic
  • 3 carrots (grated)
  • 2 sprigs fresh thyme
  • 1 teaspoon curry powder
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 200 grams labneh

Instructions:

  1. Sauté the chopped onion and garlic in hot olive oil for 3-4 minutes.
  2. Add the grated carrots and continue to sauté until softened.
  3. Add the spices and water, bring to a boil, then reduce heat and simmer for 5 minutes.
  4. Transfer to a heat-resistant bowl and let cool to room temperature for 10 minutes.
  5. Once cooled, blend with the labneh.
  6. While cooking the pasta, heat the sauce and add 1 ladle of pasta water.
  7. Combine the sauce with the cooked pasta, add 1 tablespoon of butter, mix, and serve. Enjoy!
