Ingredients:
For the Dough:
- 2.5 cups (500 ml) lukewarm water
- 6 cups all-purpose flour
- 1 teaspoon salt
For Brushing Between Layers:
- 100g unsalted butter
- 0.5 cup (100 ml) vegetable oil
For the Filling:
- 250g ground beef
- 1 medium onion, grated
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon red pepper flakes
Preparation:
Dough Preparation:
- In a large mixing bowl, combine flour and salt. Gradually add lukewarm water and knead until a smooth dough forms.
- Cover the dough with a clean cloth and let it rest for 30 minutes.
Filling Preparation:
- While the dough rests, prepare the filling. In a bowl, mix ground beef, grated onion (squeezed to remove excess water), salt, black pepper, and red pepper flakes. Mix well with your hands.
Layering and Assembly:
- Melt the butter in a saucepan. Skim off any white foam that forms on the surface. Add vegetable oil, mix, and let it cool.
- Divide the rested dough into 20 equal portions and form into balls.
- Roll each ball to the size of your palm using a rolling pin.
- Brush the rolled dough pieces generously with the butter and oil mixture. Stack 10 pieces on top of each other, ensuring to brush oil between each layer. Do not brush oil on the topmost dough piece.
- Repeat the process for the remaining 10 dough pieces.
- Take one stack of 10 dough pieces and roll it out very thinly with a rolling pin.
- Cut the thin dough into squares. Place a portion of the meat filling in the center of each square.
- Fold the corners of the dough to enclose the filling, creating a sealed package.
- Place the prepared mantı onto a baking tray, seam-side down. Brush the tops with the remaining oil mixture. A 25×35 cm baking tray was used for this recipe.
Baking:
- Preheat your oven to 190°C (375°F). Bake the mantı in a fan-less, top and bottom heat setting for 50 minutes, or until golden brown and crispy.
