Instructions:

  1. Mandarin Filling: In a small pot, bring the mandarin juice and sugar to a boil. In a separate bowl, dissolve the cornstarch in water and add it to the boiling mandarin juice, stirring constantly. Finally, add the vanilla and cook, stirring continuously, until thickened. Pour the mixture into a small tray, let it cool, and then refrigerate until firm. This step can also be done the day before.
  2. Cake Batter: Separate the egg yolks and whites into different bowls. In a bowl, whisk together the sunflower oil, milk, and flour until a smooth paste forms. Add the egg yolks and mix until smooth.
  3. Meringue: Wipe the bottom of a separate, large bowl with lemon juice. Add the egg whites and salt to the bowl and start whisking with a mixer until foamy. Gradually add the sugar while continuing to whisk until a stiff, smooth meringue forms.
  4. Combine: Gently fold one-third of the meringue into the egg yolk mixture with a spatula. Then, pour this mixture over the remaining meringue and carefully fold until homogenous, taking care not to deflate the mixture.
