Ingredients:
- 300 grams steamed pumpkin
- 2 cups granulated sugar
- 4 tablespoons (heaping) wheat starch
- 1 cup water
- 1 packet vanilla sugar
- 1 tablespoon lemon juice
- 1 cup coarsely chopped walnuts
- For the Base: 1/4 cup shredded coconut
Instructions:
- Blend the steamed pumpkin with granulated sugar, starch, and water until smooth. Transfer this mixture to a saucepan.
- Add lemon juice, vanilla sugar, butter, and walnuts. Cook over medium heat for approximately 15-20 minutes until the mixture becomes transparent and thick.
- Sprinkle shredded coconut onto a baking pan lined with parchment paper.
- Spread the Turkish delight mixture over the coconut and let it chill in the refrigerator for 2 hours.
