Ingredients:

  • 300 grams steamed pumpkin
  • 2 cups granulated sugar
  • 4 tablespoons (heaping) wheat starch
  • 1 cup water
  • 1 packet vanilla sugar
  • 1 tablespoon lemon juice
  • 1 cup coarsely chopped walnuts
  • For the Base: 1/4 cup shredded coconut

Instructions:

  1. Blend the steamed pumpkin with granulated sugar, starch, and water until smooth. Transfer this mixture to a saucepan.
  2. Add lemon juice, vanilla sugar, butter, and walnuts. Cook over medium heat for approximately 15-20 minutes until the mixture becomes transparent and thick.
  3. Sprinkle shredded coconut onto a baking pan lined with parchment paper.
  4. Spread the Turkish delight mixture over the coconut and let it chill in the refrigerator for 2 hours.
  5. Once the delight has cooled and set, sprinkle a mixture of starch and powdered sugar on top and bottom. Cut into small squares.
