Easy Cacio e Pepe Green Beans Recipe
Simply Recipes shares an easy method for making Cacio e Pepe Green Beans, a flavorful side dish that comes together quickly.
Ingredients:
- 12 ounces fresh green beans, ends trimmed
- 3 tablespoons water
- 1/2 teaspoon kosher salt
- 2 teaspoons freshly ground black pepper
- 1/2 tablespoon salted butter
- 2 tablespoons finely grated Pecorino Romano cheese, plus more for garnish
Method:
In a 10 to 11-inch stainless steel skillet over medium-high heat, combine the green beans, water, and salt. Cover and cook for about 5 minutes, tossing halfway through, until the beans are glistening and just starting to soften.
Uncover, add the pepper and butter. Cook, tossing frequently, until the water has evaporated and the beans are coated with melted butter and pepper, approximately 1 minute.
Remove from heat and transfer beans to a serving bowl. Add the cheese, toss gently until coated, and garnish with additional cheese. Serve immediately.
Storage:
Leftovers can be stored in an airtight container in the refrigerator for up to 1 day. Reheat in a stainless steel pan with a teaspoon of olive oil over medium-high heat, tossing frequently until heated through.
