Ingredients:

For the Dough:

  • 200 g cold butter
  • 2 cold eggs
  • Half a teaspoon of salt
  • 3 cups flour

For the Creamy Sauce:

  • 1 cup milk (200 ml)
  • 200 ml heavy cream
  • 3 eggs
  • 1 heaping tablespoon flour
  • 1 teaspoon salt
  • Pinch of black pepper
  • 100 g aged Kashar cheese

For the Filling:

  • 350 g spinach
  • 250 g mushrooms
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • Half a teaspoon black pepper
  • 1 teaspoon red pepper flakes

For the Topping:

  • Aged Kashar cheese

Preparation:

Begin by finely chopping the mushrooms and spinach. In a pan, heat the olive oil and sauté the mushrooms. Add the spinach and spices, cook for a few more minutes, then set aside.

In a separate bowl, whisk together the eggs, milk, heavy cream, flour, salt, and pepper. Stir in the grated Kashar cheese and set aside.

For the dough, process the cold butter and flour in a food processor until crumbly. Add the eggs and salt, and process again until a dough forms. Roll out the dough between parchment paper to fit a 26 cm springform pan. Place the dough in the pan, prick the base with a fork to prevent puffing. Line the base with parchment paper and fill with baking beans or dried legumes. Bake in a preheated oven at 190°C (375°F) for 13 minutes. Remove the parchment paper and beans, and bake for another 12 minutes.

Once the crust is partially baked, carefully spread the prepared spinach and mushroom filling evenly over the base. Pour the creamy sauce mixture over the filling. Sprinkle with grated aged Kashar cheese.

Bake in the oven at 180°C (350°F) for approximately 50 minutes, or until the top is beautifully golden brown and the filling is set. This delightful Spinach Mushroom Quiche is now ready to be served. Enjoy!
