A Deliciously Warming Sweet Potato, Cauliflower, and Peanut Stew
From the first cookbook by rebelrecipes, this nourishing dish offers a wonderful combination of creamy sauce and salty peanuts.
Ingredients:
- 6 shallots, roughly chopped
- 1 tbsp olive oil
- 4 cloves garlic, sliced
- 1 tsp cumin seeds
- 1 tsp turmeric
- 6 tomatoes, chopped
- 1 can organic light coconut milk
- 250-500ml water
- 1 sweet potato, peeled and cubed
- 1 cauliflower, chopped
- 1 tsp sea salt
- 3 tbsp crunchy peanut butter
- Juice of 1/2 lime
- 1 tsp tamari/soy
- Chilli flakes
- Toasted peanuts
- Coriander
Directions:
- Heat olive oil in a large pan with a lid over medium heat. Add shallots and fry for 8-10 minutes until soft and browning.
- Add garlic, cumin seeds, turmeric, and coriander. Stir for about 30 seconds.
- Add chopped tomatoes and cook for another 5-6 minutes.
- Stir in water, coconut milk, sweet potatoes, and cauliflower.
- Simmer with the lid on for 20 minutes until vegetables are tender.
- Stir in peanut butter, lime juice, tamari, chilli flakes, salt, and pepper. Simmer for a couple of minutes.
- Serve topped with toasted peanuts and fresh coriander.
